Thai inspired spicy salad

Thai inspired salad using up the leftovers of my homemade peanut dressing. This is really spicy and zesty, my two favourite combinations :)


For the dressing:


2 tbsp peanut butter ( no palm oil and organic if possible)

1/2 can of coconut milk

1 tsp soy sauce 

Small piece of ginger 


If you’re just making a salad for yourself you will probably want to save half of this, it keeps for at least a week.


For the salad:


Salad leaves of your choice

1 carrot

Almonds/cashews/peanuts- roasted (your choice!)

1 hot chilli

Spring onions

1 clove of garlic

Salt and pepper

1 lime


Combine all the dressing ingredients and blend, set aside.


Tear your salad leaves and add to a large mixing bowl. Grate the carrot and chop the rest of the veg and add to the bowl. Squeeze over half the lime and break up the roasted nuts and add these to to the bowl too.


Start by adding 1/4 of the dressing to the bowl, stir and keep adding if you prefer more sauce.


Season with salt and pepper and a piece of lime
