Wild mushrooms + spinach on butter bean mash
If you’re looking for something that feels decadent but is actually super healthy, look no further :)
***Wild mushrooms and spinach on butter bean mash***
You will need
Olive oil
Sesame oil (olive oil is fine if you don’t have)
2 cups of mushrooms (maitake or shiitake would be perfect)
1 can white beans
1/2 lime juice
2 garlic cloves chopped
1 chili chopped
1 onion or equivalent of spring onions chopped
1 cup of spinach or kale
Handful of feta cheese
Toasted sesame seeds
2 tbsp soy sauce
Handful of basil
Handful of walnuts
Start by making the white bean base. Simply blend the drained beans, 1 clove of garlic, lime juice, basil, 2 tbsp olive oil and 3 tbsp water. If the base is too thick simply add more water but don’t go overboard as you want it to be relatively thick. Set aside
Now fry the mushrooms, onions, Chili and remaining garlic in 2 tbsp of sesame or olive oil for 4 mins on a medium heat. Add the spinach or kale and soy sauce and cover. Cook for a further 4 mins and then take off the heat.
Arrange the white bean base on 2 plates and then simply add the veg on top. Sprinkle with sesame seeds, feta and walnuts and season with salt + pepper.
