Seaweed + glass noodle salad

This is so quick and easy to make. I just wanted to use up old veg so it’s a pretty simple recipe, I’m sure you could make it more fancy if you wish :)

Serves 2

You will need…

glass noodles (look at packet for serving size)

handful of mushrooms

1 chili

small piece of ginger

1 clove of garlic

handful of spring onions

1 tbsp sesame oil

1 tbsp soy sauce

juice of 1 lime

1/2 cup of peanuts

3 sheets of wakame

  1. Cook the noodles according to the packet instructions. Drain and leave in the sieve to cool.

  2. Chop the veg (aside from the seaweed) and fry in the sesame oil on a medium heat for 5 mins.

  3. Wake up the noodles by pouring cold water over them, drain and place in a mixing bowl. Cut the seaweed into thin strips and add to the noodles along with the cooked veg, squeezed lime juice, soy sauce and peanuts.

  4. Transfer to your serving bowls and season with salt. You can always add dry chillies to turn up the spice.
